Chicken Fajita Quinoa Salad

Food is good.  Here’s an interesting recipe from a long time ago.  I remember it being pretty tasty:



4 cups cooked quinoa  

12 ounces boneless, skinless chicken breast  

1 tablespoon coconut oil

2 green peppers, sliced

1 onion, chopped

1 packet fajita mix

1 avocado, quartered and kept separate from other ingredients

Nonfat cheddar cheese , optional

Salsa, to taste  

Cook the boneless, skinless chicken breast in the coconut oil with the green pepper and the onion along with the fajita mix as per the directions.  Combine the quinoa with the chicken mixture.  When eating, warm up the chicken and quinoa, and then divide the avocado, nonfat cheddar cheese, and salsa among the servings.  

This makes a batch of 2060 Calories (56g Fat, 264 Carbs, 124g Protein).

4 servings of 515 Calories, 14g Fat, 66g Carbs, 31g Protein

6 servings of 343 Calories, 9g Fat, 46g Carbs, 21g Protein
