How do you know if a diet works?

I've always thought that trust is an interesting topic.  First, to me, true trust is either 100% or 0%.  You can't trust someone 50% - that's not trust to me!  So how do you know, and I mean really know, when you can truly trust someone?

I think the only time you really know when you can truly trust someone is when that someone is out of your life completely.  Only then can you look back and say, "Wow, that person never broke my trust.  I could truly trust that person."  

(Please note: I'm talking about "true" trust.  I trust lots of people in my life.  I trust that my employees will do their job without me constantly looking over their shoulders; I trust that my bank isn't going to steal the money that I deposit into my account; I trust that the coffee shop I go to everyday is going to use a clean glass every time, and so on and so on.  I have lots of trust in my life.  What I am talking about here is "true" trust, meaning 100% trust.)

Diets are exactly the same.  I've had a lot of clients come to me with the goal of losing weight.  Some people want to lose 5 pounds; some want to lose over 100.  They all have the same story: at some point in their life, diet x "worked" for them.  My response is the same each time: "That diet didn't work for you.  If it did, you wouldn't be here with me right now."  Think about that for a minute if you've ever tried to lose weight using a diet because no truer words have ever been written.  

It kills me every time I see a celebrity on the cover of a magazine touting some kind of diet because it's the same celebrities over and over.  They lose a significant amount of weight, and then they're on the cover with the headline "How so-and-so lost the weight!"  Then, 2 years later, they're on the same magazine with the same headline.  

So what diets really work?  You should know where I'm going with this:

YOU CAN NEVER KNOW IF A DIET HAS TRULY WORKED!  The only way to know: go on a diet, lose the weight you want to lose, and then keep it off until you die.  THAT diet worked!  The only problem is you'll never know.  Because you're dead.  

If you want to lose weight, then what's the answer?  Stop "dieting," think long-term, and adopt a lifestyle that is going to allow you to maintain your weight loss once it happens.
