James Brown Tuna Salad

James Brown sings about a bunch of his favorite foods during the end of “Make it Funky.”  At one point he yells “Smothered snake … smothered SNAKE!!” 

I just googled “what is smothered snake.”  Perhaps he’s saying “smothered sTeak.”    Nobody seems to know.

I love JB.

Here’s a recipe for a tuna salad that is cheap, easy, and delicious:

3 cups yellow and green string beans  

3 cups cherry tomatoes  

5 ounces canned tuna packed in water, drained  

½ cup pitted black olives

2 cloves garlic, chopped

2 cups canned garbanzo beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon balsamic vinegar

Bring a medium sized pot of water to a boil.  Cook string beans about 6-7 minutes, or until firm and cooked through.  Rinse with cold water and let cool.  Mix remaining ingredients in a bowl and add the string beans.  Toss.

This makes a batch of 1040 Calories (24g Fat, 148g Carbs, 80g Protein).

Divide into 2 servings of 520 Calories, 12g Fat, 74g Carbs, 40g Protein

OR

Divide into 3 servings of 347 Calories, 8g Fat, 49g Carbs, 27g Protein
