Yes, this is a recipe for a salad.  Just a salad.  

But you know what?  I see people do salads wrong everyday.  They either don't have enough calories because their salad is all greens and ruffage, OR they have way too many calories because they overload on a bunch of "healthy" items like nuts and avocado, never realizing that these items are VERY dense in calories.  

And you know what else?  I don't like the word "salad."  Say "salad" and people think "oh, this is something lighter than a regular meal .... this won't fill me up."


Instead of "salad," I prefer "cold meal."

Here's a well-balanced cold meal for you:




1 bag salad greens  


3 tomatoes, sliced


3 cucumbers, sliced  


1 ½ onions, chopped  


1 ½ apples, diced  


9 ounces boneless, skinless chicken breast, cooled and shredded 

DRESSING (make fresh each time you have a serving):


olive oil (stick with less than a tablespoon for each salad)

lemon juice, to taste


balsamic vinegar, to taste


fresh herbs, to taste

Combine ingredients and mix thoroughly.  

Divide into 3 servings of 334 Calories, 7g Fat, 46g Carbs, 21g Protein



Divide into 2 servings of 501 Calories, 10.5g Fat, 69g Carbs, 31.5g Protein
